Red Thai curry
is one of my brother in law’s favorite dish. He taught me how to make this,
and I wanted to share it with you. It’s very simple to make and only requires a
few ingredients!
Ingredients:
1 ½ Tbsp Sugar
Salt to taste
2-3 Tsp Fish Sauce
2-4 Tbsp Red Thai Curry Paste
1 Onion
400ml Coconut Milk
2 Chicken Breasts (cubed)
Mushrooms (approx. 80g)
3 Bell Pepper (red, yellow and
green)
Directions:
1 Wash the veggies and cut into bite size pieces. (I
cut the bell peppers and the onion into thin slices)
2 Heat 2 Tbsp oil in a frying pan.
3 Add the red curry paste and fry for 1-2 minutes.
4 Add the chicken an cook/fry until completely cooked
through (it should not be pink anymore).
5 Add the veggies stir together, and cook for a few
minutes.
6 Now add the fish sauce, sugar and coconut milk and mix
until well combined.
7 Cook the curry for at least 5-10 minutes, or until the
veggies are soft.
8 Serve with freshly cooked rice, enjoy!
And there you
have it, homemade Red Thai Curry. Wasn’t this super easy and quick? You can of
course change the veggies in the recipe to whatever you like, but these are the
ones mainly used when making red Thai curry.
Have fun making
them, and don’t forget, if you post a picture online, tag it with #InCook so I
can see it!
Until next time!
