Osterkuchen / Osterfladen Rezept - Easter Tarte "Cake" Recipe
Osterkuchen
oder Osterfladen wie wir diesem Gebäck sagen in der Schweiz ist einfach
wahnsinnig lecker. Ja, er wird eigentlich nur an Ostern gebacken, aber man kann
ja einfach die Hasen-Deko weglassen & ihn das ganze Jahr durch backen – Ich muss gestehen, das habe ich des öfteren gemacht, da er einfach so super gut
schmeckt!
Zutaten:
Füllung
120g Reis
30g Butter
Schale einer Zitrone
2 Eier
60g Zucker
100g Aprikosen Marmelade
500ml Milch
1 TL Vanille Extrakt
1 Prise Salz
1 Mürbeteig
Zubereitung:
1 Milch aufkochen, dann den Reis dazu geben und für
20-25 Minuten kochen lassen.
2 Mürbeteig in die Tarte Form geben und den überlappenden
Teig abschneiden und die Tarte in den Kühlschrank geben.
3 Zucker, Zitronen Schale, Butter und Vanille Extrakt
zum gekochten Reis dazugeben und gut mischen. (Solange der Reis noch heiss ist,
damit die Butter schmilzt und der Zucker sich auflöst)
4 Eigelb zu der abgekühlten Milchreis Mischung geben und
gut vermischen.
5 Eiweiss mit dem Salz steif schlagen.
6 Eiweiss nun vorsichtig unter die Milchreis Mischung heben.
7Aprikosen Marmelade nun gleichmässig auf dem Teig Boden
verteilen.
8 Füllung darüber giessen und die Tarte bei 180 Grad Unterhitze
für 20-25 Minuten backen.
9 Nach den 20-25 Minuten den Backofen auf Ober- und
Unterhitze schalten und den Osterkuchen für weitere 20-25 Minuten backen.
10 Den Kuchen auskühlen lassen und mit Puderzucker
bestäuben, servieren und geniessen.
Und fertig ist

Easter-Cake is pretty traditional in Switzerland and the surrounding countries and is just
delicious! Yes, usually it is baked during easter, but if you leave out the
bunny decor, you could easily make this throughout the year. And I have to admit,
I have done this on various occasions because this tarte is just so delicious!
Ingredients:
Filling
120g Rice
30g Butter
Zest of 1 Lemon
2 Eggs
60g Sugar
100g Apricot Jam
500ml Milk
1 Tsp Vanilla Extract
1 Pinch of Salt
1 Shortcrust dough (store bought or
homemade)
Directions:
1 Bring the milk to a boil, add the rice and cook it
for 20-25 minutes, or until soft.
2 Add the shortcrust dough into your tarte pan,
remove the overlapping dough and set the tarte aside in the fridge.
3 Add sugar, lemon zest, butter and vanilla extract to
the hot milk rice mixture and stir until combined. (You have to add it while it’s
still hot so the butter melts and the sugar dissolves)
4 Let the mixture cool and then add the egg yolks and mix.
5 Mix the egg whites with the salt until stiff peaks form.
6 Gently mix the stiff egg whites under the milk rice
mixture.
7Evenly spread the apricot jam on the bottom of the tarte.
(on the shortcrust dough)
8 Add the filling on top and bake at 180 degree celsius bottom
heat for 20-25 minutes. (Make sure the oven is set to bottom heat only, to
ensure we get a crunchy crust in the end!)
9 After the 20-25 minutes, set the oven to top &
bottom heat and bake for an additional 20-25 minutes or until the tarte is
golden brown.
10 Let the tarte cool completely and then sprinkle with
powdered sugar, serve, and enjoy!
And there you
have it, Easter-Cake/Tarte, or Milk rice cake, depending on when you are baking
this deliciousness :P!
