Mini Bienenstiche Rezept - Mini Beesting Pastries Recipe
Mini
Bienenstiche – meine abgeänderte Variante des Deutschen Klassikers. Luftig,
knusprig, süss, und super lecker! Das Rezept ist relativ einfach, und das Endergebnis super schön, und wie schon gesagt, extremst lecker!
Zutaten:
Teig
300g Mehl
1 TL Trockenhefe
½ TL Salz
1 TL Vanille Extrakt
1 Ei
3 EL Zucker
80g Butter
100ml Milch
Dekoration / Topping
40g Mandelblättchen
50g Zucker
1 EL Milch
50g Butter
Füllung / Crème
200ml Milch
3 EL Zucker
2 Eigelbe
3 Blätter Blatt-Gelatine
1 Prise Salz
1 TL Vanille Extrakt
200ml Schlagsahne
Zubereitung:
1 Teig vorbereiten: Dazu Mehl, Zucker, Salz und Hefe
in einer Schüssel mischen.
2 Dann die restlichen Zutaten dazugeben. Vanille
Extrakt, das Ei, Butter und Milch und zu einem weichen Teig kneten.
3 Den Teig an einem warmen Ort für ca. 2h aufgehen
lassen.
4 Nach einer Stunde schon mal die Crème vorbereiten
5 Dazu Blattgelatine in kaltem Wasser aufweichen. (ca. 5
Minuten)
6 Milch, Zucker, Salz, Eigelb und Vanille Extrakt in einer
Pfanne aufkochen lassen und dann sofort vom Herd nehmen.
7 Gelatine-Blätter vom Wasser herausnehmen, und unter die
Ei-Milch Mischung mischen.
8 Die Creme dann abkühlen lassen, bis sie leicht fest
wird am Rand.
9 Nun die Schlagsahne aufschlagen und dann vorsichtig
unter die Crème heben.
10 Die fertige Crème dann in einen Spritzsack geben und im
Kühlschrank für 1h kühl stellen.
11 Nun 12 gleich grosse Stücke aus dem Teig formen und zu
Kugeln formen.
12 Während die Bienen Stiche nochmal für 15 Minuten
aufgehen, das Topping vorbereiten.
13 Dazu einfach alle Zutaten in einer Bratpfanne auf
mittlerer Stufe aufkochen, bis sich der Zucker aufgelöst hat.
14 Mandelmischung gleichmässig auf die Bienenstiche
verteilen.
15 Dann bei 180 Grad für ca. 20 Minuten backen, oder bis
sie gold braun sind.
16 Bienenstiche halbieren und sobald abgekühlt mit der
Crème befüllen, servieren und geniessen.
Und fertig sind
eure Bienenstiche! Knuspriger Deckel der leicht karamelisiert ist mit einer
leichten, luftigen Creme in der Mitte.

Mini Beesting
pastries – my version of the German classic. Fluffy, crunchy, sweet and just
delicious. The recipe is quite simply to make, and the end result, as I said,
is super delicious!
Ingredients:
Dough
300g Flour
1 Tsp Dried Yeast
½ Tsp Salt
1 Tsp Vanilla Extract
1 Egg
3 Tbsp Sugar
80g Butter
100ml Milk
Decoration / Topping
40g Almond Shavings
50g Sugar
1 Tbsp Milk
50g Butter
Filling / Cream
200ml Milk
3 Tbsp Sugar
2 Eggs
3 Sheets of Gelatine
1 Pinch of Salt
1 Tsp Vanilla Extract
200ml Whipping Cream
Directions:
1 Prepare the dough: Add flour, sugar, salt and yeast
into a bowl and mix.
2 Add the remaining ingredients. Vanilla, egg, butter
and milk and mix until a soft dough forms.
3 Let the dough rise for about 2 hours.
4 After one hour, start preparing the filling.
5 Add the sheets of gelatin in cold water to soften (for
about 5 minutes).
6 Add milk, sugar, salt, egg yolk and vanilla to a sauce
pan and bring to a simmer, remove from the heat.
7Remove the softened gelatin sheets from the water and
add to the still warm egg mixture, stir until well combined.
8 Let the cream cool, until the edges slightly
harden/thicken.
9 Now whip the whipping cream until stiff peaks form and
gently fold under the cream mixture.
10 Fill the finished cream into a piping bag, and
refridgerate for at least one hour.
11 Now form 12 equally sized balls from the risen dough and
set them on a baking sheet.
12 Let them rise for an additional 15 minutes and meanwhile
prepare the topping.
13 Simply add all ingredients for the topping in a frying
pan and cook until sugar is dissolved.
14 Spread the almond mixture evenly among all the beesting
pastries.
15 Bake the pastries at 180 degree celsius for about 20
minutes, or until golden brown.
16 Cut the pastries in half and as soon as they are cooled
completly fill with the cream, serve and enjoy!
And there you
have it, German Beesting pastries. Crunchy and slighlty caramilsed top, with a
fluffy creamy filling in the middle.
