Himbeere, Weisse Schokolade & Pistazien Tart Rezept - Raspberry, White Chocolate & Pistachio Tart Recipe
Diese Tarte
sieht nicht nur unheimlich schön aus, sondern schmeckt auf fantastisch!
Frische Beeren und weisse Schokolade, was will man mehr!
Zutaten:
Kruste
250g Mehl
2 Eigeble
30g Puderzucker
120g kalte Butter
2 EL kaltes Wasser (mit Eiswuerfel)
Fuellung
1-2 TL Zitronen Schale
3 Eier
½ Granatapfel
200ml Schlagsahne
300g Mascarpone
250g frische Himbeeren
100g Weisse Schokolade
100g Pistazien
2 TL Vanille Extrakt
Zubereitung:
1 Für den Teig: Mehl, Puderzucker und eine Prise
Salz in einen Mixer geben und vermischen.
2 Kalte Butter dazugeben und weiter pulsieren (mixen)
bis die Butter in ganz kleine Stücke gehackt ist. (Das ganze sollte so wie
Sand aussehen)
3 Das Wasser und die Eigelbe dazugeben und weiter mixen
bis sich ein Teig formt.
4 Teig in eine Schüssel geben und zusammen kneten.
5 Teig ausrollen bis es in die Tarte form passt. (Meine hat
einen ca. 22cm Durchmesser)
6 Nun Teig in die Form geben und den Boden & Rand mit
einer Gabel einstechen.
7 Den Teig bei 190 Grad für 20 Minuten blind-backen.
(Teig mit Backpapier belegen und mit Reis oder einem anderen Gewichten befüllen)
8 Backpapier mit der Füllung (Reis oder ähnliches)
entfernen und nochmals für 20 Minuten backen.
9 Für die Füllung: Granatapfel halbieren & die
Samen einer Hälfte entfernen und beiseite stellen. (Schau dir im Video an wie
ich es gemacht habe)
10 Schlagsahne in der Mikrowelle oder auf dem Herd
aufkochen.
11 Auf die weisse Schokolade geben und beiseite stellen.
12 Zitronen Schale, Vanille Extrakt sowie die Eier zur
Mascarpone geben und gut vermischen.
13 Sahne-Schokolade Mischung nun gut vermischen und unter
die Mascarpone-Creme heben.
14 Die Hälfte der Pistazien auf den Tarte Boden geben und
mit der Hälfte der Füllung überdecken.
15 Die frischen Himbeeren nun in der Tarte verteilen und
den Rest der Füllung darüber giessen.
16 Die Tarte dann bei 180 Grad für ca. 15-25 Minuten
backen.
17 Mit den restlichen Pistazien und den Granatapfel-Samen
dekorieren, servieren und geniessen.
Und fertig ist
euere wunderschöne Tarte. Ich weiss das ganze sieht nach viel Arbeit aus, aber
wenn du dir die Schritte genau ansiehst ist es gar nicht soviel.

This tarte does
not only look amazing, but also tastes amazing! Fresh berries with white
chocolate and mascarpone, what more can you ask for?
Ingredients:
Crust
250g Flour
2 Egg Yolks
30g Powdered Sugar
120g cold Butter (cubed)
2 Tbsp cold water (I added ice
cubes, to make sure it’s really cold)
Filling
1-2 Tsp Lemon zest
3 Eggs
½ Pomegranate
200ml Whipping Cream
300g Mascarpone
250g fresh Raspberries
100g white Chocolate
100g Pistachio
2 Tsp Vanilla Extract
Directions:
1 For the dough: Add flour, powdered sugar and a
pinch of salt in a food processor and pulse 2-3 times.
2 Add the cold butter and pulse until the butter is
well incorporated. It will look like sand.
3 Add the water and the egg yolks and pulse until a
dough forms.
4 Transfer the dough into another bowl and form a ball.
5 Roll out the dough so it fits into your tarte form.
(mine has a 25cm diameter)
6 Now add the dough into your tarte pan and make sure the
sides are high enough. Poke the bottom as well as the sides with a fork.
7 Blind-bake the dough at 190 degree celsius for 20 minutes.
(Blind-baking simply means that you will line the dough with baking paper and
add some weight to it, I used rice in this case.)
8 Remove the baking paper including the weight (rice or similar),
and bake the crust for another 20 minutes.
9 For the filling: Cut the pomegranate in half, and remove
the seeds from one half, set aside.
10 Bring the whipping cream to a boil, either in the microwave
or on the stove.
11 Pour over the white chocolate and set aside.
12 Add the lemon zest, vanilla extract and the eggs to the
mascarpone cream and mix until well combined.
13 Stir the white chocolate – cream mixture, pour into the
mascarpone cream and mix again.
14 The crust should have been removed from the oven by now
and should have cooled a bit. Add the half of the pistachio on the bottom and
top off with half of the filling.
15 Spread the fresh raspberries across the tarte and top of
with the remaining filling.
16 Bake the tarte at 180 degree celsius for about 15-25
minutes.
17 Let the tarte cool for a bit, decorate with the remaining
pistachio and the pomegranate seeds, serve and enjoy!
And there you
have it, a gorgeous and super delicious tarte. I know there are quite a few
steps to this tarte, but if you read carefully, you will see that it is not
that much work, and you can even buy the shortcrust dough pre-made – which saves you
a lot of time!
